Most Flores coffee is grown by smallholder farmers in regions like Bajawa, Manggarai, and Ende at high altitudes between 1,000 and 1,800 meters. These optimal conditions allow the Arabica cherries to mature slowly, resulting in fully developed sugars, rich flavor profiles, and exceptional bean quality. While producers traditionally rely on the Indonesian giling basah (wet-hulling) process to achieve a smooth body and distinct taste, many are expanding into washed and natural processing methods to meet specialty coffee demand.
